Lackawanna County Bakery Bustles During Thanksgiving Holiday

While many people have a Thanksgiving holiday, not everyone does. That includes a bakery in Scranton.

SCRANTON, Pa. — Whether she was at the store front or in the kitchen, Lynn Sandy’s Bakery on Pittston Avenue in Scranton was packed with people.

The bakery is putting out all the sweet treats you can think of for the Thanksgiving holiday.

“Definitely cakes. Thanksgiving is a big cake party, pumpkin roll. We’ve got a lot of cheesecakes ready to go. Like I said before, Kolachi, cookie sheets. Lost of different things,” said Alisha Summa.

Summa is the manager of the bakery.

She says the bakers were up at 1 a.m. Thursday working to make sure customer orders were filled and the front cases were stocked for the 7 a.m. rush hour.

“We’re celebrating Thanksgiving. I got a lemon meringue pie and a double-crust blueberry pie, and then I got cupcakes,” said John Pesote of Dickson City.

“Lynn Sandy’s Pumpkin Squares are the best. It’s basically just a pumpkin square instead of all the rind. It’s just a little bit of rind and a lot of pumpkin filling,” explained John Mecca of Dunmore.

Lynn Sandy’s bakers say holiday orders for this year have already surpassed last year’s.

“Between Tuesday, Wednesday and Thursday, we probably had a little over three thousand pies,” Summa added.

That’s not to mention the tons of cookies, cupcakes, and cakes that came out the door.

Summa says that while orders are up this year, there were some challenges getting some items the bakery needed.

“We had a tough time getting the chocolate chips in certain boxes, but we have really good relationships with our distribution centers who were able to get stuff for us,” Summa said.

Lynn Sandy’s Bakery is closed on Friday, November 25. They reopen for small businesses on Saturday, November 26.
