The story of cake day

1 cup (2 sticks) unsalted butter, at room temperature
2 cups of granulated sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon bicarbonate of soda
1 cup buttermilk, at room temperature
1. Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans. Set aside.
2. In the bowl of your electric mixer, beat the butter on medium speed until creamy. Add the sugar and beat until light and fluffy. Add the eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined.
3. In a separate bowl, mix the flour, baking powder, and bicarbonate of soda. Gradually add this to the butter mixture, mixing until just combined after each addition. With the mixer on low speed, add the buttermilk and mix until everything is well combined.
4. Divide the batter evenly among the prepared pans and bake for about 30 minutes or until a dent remains.
