Bebinca, the popular cake that comes in layers, with a subtle mix of coconut, spices and ghee, is an unmatched dish in flavor and uniqueness that has conquered several connoisseurs in the first serving.

Bebinca is essentially a pudding cake that originates from Goa and holds a special place as a Christmas and special occasion dish. Lots of eggs, coconuts and hot spices go into its making, all it requires is very few ingredients, time and a lot of patience as you have to piece the Bebinca together in many soft baked ghee soaked layers. Traces of coconut and cardamom flavor linger after Bebinca melts in your mouth.
Traditionally, this cake is made in a clay pot over a fire fueled by coconut shells and baking 7 to 16 layers can take longer than imagined. People use ovens to make this after preparing it, offering these succulent layers on a plate accompanied by other choice Goan delicacies such as spritz cookies, nankatai, tutti frutti cake, kulkul and marzipan. Family restaurants serve it with vanilla ice cream and a strong cup of coffee. Chefs from all over the world have tried some variants of this recipe, such as bebinca flavored cheesecakes, etc.

Ingredients

- Coconut milk
- Powdered sugar
- egg yolks
- all purpose white flour
- nutmeg and cardamom
- Ghee – Clarified Butter
How to prepare

1. In a bowl, dissolve the sugar by whisking together the coconut milk and sugar.
2. Beat the egg yolks and mix them with the coconut-sugar mixture. Beat again.
3. Add the flour and spices now and mix well.
4. Now cover the ghee inside the baking tray all the way to the bottom.
5. Create the first layer of Bebinca by pouring a few ladles of the mixture into the pan.
6. Bake the dish with the pan in the oven on the grill until the layer is cooked through.
7. Repeat the same process until the batter is used up and you have the desired number of layers on the cake.
8. After the cake has cooled, gently remove it from the baking pan.
