Christmas 2022: Here is your reminder to soak the dried fruits for the plum cake

We are a month away from Christmas and preparations are in full swing. What makes Christmas even more special is the joy of enjoying the quintessential plum cake. Did you know that the preparation of the plum cake begins months in advance? Yeah, we’re not lying here. The dried fruits are soaked in rum or brandy for months to obtain a slightly bitter taste and a dense texture. The aroma of the Christmas plum cake, with its dried fruit and alcoholic dried fruit, is intoxicating and simply irresistible. Plum cakes are usually made from dried fruits such as grapes, currants, raisins, or prunes. Some even use fresh fruits based on one’s taste and preference.

In case you forgot to dip the berries on your Christmas cake, Chef Saransh Goila is here with a reminder. The chef asked his followers to share “that unique dish” that reminds them of Christmas. Going first, he wrote: “For me, it has to be the cake and soaking the fruits at least a month beforehand is key.” “Christmas is coming friends and my heart is already happy happy. To make the soaked fruits for the plum cake, take 50 grams of almonds, cashews and walnuts in a bowl. Also, add 35 grams each of cranberries, black raisins, tutti frutti, and golden raisins into the bowl. For the spices, you would need 4 star anise, 3 pieces of cinnamon, 1 teaspoon of ginger powder, and ¼ teaspoon of nutmeg powder. Add lemon zest and rum/coke (depending on your preference). shake it good And set it aside to rest.

How to make plum cake? Here is Saransh Goila’s recipe


  • Lemon zest: 1
  • Orange zest: 1
  • Powdered cloves: 1/4 teaspoon
  • Powdered ginger: ½ teaspoon
  • Ground cinnamon: ½ teaspoon
  • Butter: 250gm
  • Brown sugar: 200gms
  • Baking powder: ½ teaspoon
  • Almond powder: 100gms
  • Vanilla essence: 1 teaspoon
  • Eggs: 4
  • Icing sugar (to decorate)


Step 1: Preheat the oven to 170 degrees. Add the maida, baking powder and almond powder to a bowl. Add all the spice powders and pass through a sieve to remove any lumps or large particles.

Step 2: In a skillet, beat some eggs.

Step 3: Next, mix together some buttercream and brown sugar. Add the lemon and orange zest to the mixture. Add the beaten eggs and beat again. Pour in the vanilla essence. Give all the ingredients a quick mix.

Step 4: Now pour in the sieved powdered mixture and beat well. Pop in the soaked dried fruits.

Step 5: Pour in some orange juice and beat well.

Step 6 – Transfer things to a greased pan and bake in the preheated oven for 45 to 50 minutes.

Step 7: Once the cake is cool, drizzle icing sugar over the top. Decorate it with your favorite Christmas decorations. It is ready to serve.
